The “laziness bug” hit me last night, although I thawed chilean sea bass for dinner last night. I just didn’t want to bother with making a somehow complicated meal, so when my husband got home, I told him I was just simply lazy to cook. Guess what, I still did cook, but it was really simple enough and it didn’t require a lot of “to do’s”. Wanna see what I concocted?

To most Pinoys, you’ll know what this is. Yup, the Amboy ate this, and I’m one contented cook. He is not really picky anyway when it comes to food. What did I do with the thawed fish? I did the “no-no”, they’re right back in the freezer. Kitchen police!!!!!
Why should I make it hard for me, when it can be easy, right?

I was in a hurry yesterday, and quite tired because I went food shopping. I whipped up this one pot dinner I’m calling sesame chicken with broccoli.

The husband doesn’t really care for chicken breast more so the thick ones, but on this dish, he just simply devoured them.

Got no choice, last night I had to cook. The AmBoy loved these. Native Pinoy na asawa ko.


And that is the reason why friends and family volunteers to ‘feed’ us whenever we’re back in the Philippines. He eats anything for as long as he sees me eat the same thing. He has coined a new name for our ‘tortang talong’ - - eggplant souffle!!!! O di ba cute?

Alpha and Jane requested for the recipe of the soba noodles and kare-kare I made a few days ago. Ladies, as you may have probably noticed, I really don’t post recipes on my two blogs. I post lots of dishes that I cook, because cooking is part of my daily routine. It’s not that I’m hesitant to share, I’m afraid my page will be classified as food blog because I’m not really a cook. I’m simply a recipe hungry housewife.
Alpha and Jane, I’m happily sharing these two recipes, nevertheless. I hope when you make them, they’ll be good enough for your palate. Let me know.
Soba Noodles(recipe from a friend) I can’t give precise measurements as I just eyeball them when I make this dish.
Ingredients:
soba noodles
extra virgin olive oil
sesame oil
broccoli florets
firm tofu sliced in cubes
satay sauce
1. fry tofu in extra virgin olive oil
2. boil water and blanch broccoli for a few minutes. drain and stop cooking of broccoli by immersing them in ice cubes
3. boil water and add soba noodles till it’s done (firm but not overcooked). drain
4. heat extra virgin olive oil in a wok or large pan and add soba noodles
5. add satay sauce and mix
6. add sesame oil
7. add tofu
8. add broccoli florets
9. mix thoroughly
Kare- kare ( recipe also from a friend)
Ingredients:
3 kg. oxtail, cleaned and cut
1 kg beef shank
1 piece of a decent sized tripe cut sliced in bite size
5 cloves crushed garlic
1 sliced banana heart
1 medium sized onion. sliced
2 bundles sitaw (long beans) cut into pieces
4 eggplants cut into 1/2″ slices
water from 1/4 cup achuete(achuete seeds soaked in hot water)
1/3 cup toasted rice (brown in a pan) and ground fine
1/2 cup creamy peanut butter (unless you’re patient enough to roast peanuts and pound them)
salt and pepper to taste
peanut oil
1. boil oxtail and tripe once and discard water. boil again until tender
2. boil beef shank separately until tender
3. saute garlic and onion in peanut oil
4. add achuete water and peanut butter
5. add meat and the remaining stock
6. thicken with toasted rice powder
7. add vegetables, banana hearts going first
8. season with salt and pepper
Bagoong ( shrimp paste)
1/3 cup olive oil
1/2 cup chopped garlic
1/2 cup sliced shallots
1 cup fresh salted alamang
1/3 cup water
1/3 cup brown sugar ( adjust quantity depending on the saltiness of the alamang)
1 - 2 pcs sliced bird’s eye chilies(labuyo)
in a saucepan, heat olive oil and slightly brown garlic. add shallots, alamang, water, brown sugar and chilies. let simmer until thick.

So, I slaved myself in the kitchen yesterday. As mentioned, here’s proof of that tiring kitchen adventure. Tiring as it was, I will definitely make this dish again. Yeah… it will still be made from scratch. Guess, it was delicious enough for my husband’s taste as he ate it with gusto, and that was with ‘bagoong’(sauteed shrimp paste).

I made this quick meal last night. Remember, the husband came home late and we had dinner at about 10:00 p.m. right when he stepped in. Whipping up an easy to make and quick dish was the only way to go. I was done in a matter of minutes. Yum!

Sauteed shrimp with hoisin sauce and garlic and steamed asparagus

This was last night’s dinner: broiled flounder fillet and grilled yellow and green zucchini. After all the binging we’ve been doing the past few days, I prepared something light and kind of “healthy”.
This ended my kitchen adventure for the week. I won’t be cooking till Monday.
