I hate it when I can’t keep my word. And as you may all know by now, I have been remiss again on updates. What can I tell you, life has been great. I’m not even going to defend myself anymore. Yes, this thing called life has been cruising so well lately that I have found myself sleeping in more than ever, and I don’t feel any guilt at all because I know that I deserve it. After two stressful months, everything is bliss!
After an appointment on November 5th (which went very well, and we’re both happy about), my husband and I officially made that day the beginning of Christmas in our household. It’s funny how we can both greet each other “Merry Christmas” now instead of “Happy Holidays”. By next year, my husband will be officially baptized Catholic. In fact, the Rite of Acceptance ceremony will be held this December 7th.
Oh and this chilly weather has been really forcing me to stay indoors. I feel so bad for the residents of Buffalo. I can’t really complain because we’re not buried in snow, it’s just brutally cold here in the Big Apple. The past week or so, I only find myself out in the streets if it’s absolutely necessary.
Being indoors is also making way for my culinary experiments in the kitchen. Last weekend, I made tablea (cacao chocolate drink). This tablea was given as a gift from a friend who recently went to the Philippines. I added hemp milk and coconut sugar to sweeten it. It was really sinfully good!
Of course, hot tea is also constantly being brewed. I found a new favorite in Teavana’s Blueberry Bliss. It’s naturally caffeine free and it’s awesome with or without added sweetener.
And officially, I’m now a Vanilla Chia pudding addict. It took me forever to try this vegan recipe but when I finally did I was totally hooked. For variation, I top it with different fruits each time but one thing is constant- of course, vanilla extract and hemp milk which is my only liquid of choice when making chia pudding. I’ve tried almond milk but it’s the creamy hemp milk that I can’t resist.
By the way, it’s beginning to look a lot like Christmas here at home. I’ll be back for more updates sooner than later. And this time, I better keep my word.
