As I’ve written before, I have totally lost interest in cooking the past few weeks. I have finally started to ease in to making dinners again. So last night, I prepared New Zealand Lamb Shank with rosemary and mint sauce, and made baked potatoes. I wrote, ‘I prepared’ because I didn’t really make it from scratch. I figured, since I am good as starting out again, I opted to raid my freezer and I picked this easy and quick dinner from the box.
It was satisfying and it was delicious. The meat was so tender and juicy. Tonight, I will tackle and work on a dinner made form scratch. It’s nice to be back.
